The granola bar that actually keeps you full.
I don’t really like to swear but I swear by this granola recipe. It’s absolutely delicious and it’s the only breakfast food I’ve found that can keep me full until lunchtime. But this granola is so versatile you can just as easily eat it for a snack or dessert.
I make this granola all the time and it’s been especially helpful to have around while I’ve been nursing. It has lots of fiber and it’s healthy but it tastes like a dessert. Win-win! In fact, my second cousin recently said it tasted like a no-bake cookie. Doesn’t get much better than that!
I originally came across this recipe from a HyVee Grocery magazine a few years ago but I’ve tweaked it a little. It’s such an adaptable recipe you can try different dried fruit if you don’t like cranberries, butterscotch chips instead of chocolate or creamy peanut butter instead of crunchy (preferred).
Here’s the recipe:
2 cups oatmeal
1 cup ground flax seed
1 cup dried cranberries
1 cup dark chocolate chips
1 cup peanut butter
1 cup honey
1-2 T. nutritional yeast flakes
1 cup protein powder (this is in the original recipe but I don’t put it in mine)
Mix all ingredients together in a large bowl. I like to chill mine in the fridge but it’s just as good at room temperature.
I seriously love this granola. It’s so filling and delicious – sometimes I have a piece for dessert! I almost always have it in my house and I haven’t gotten tired of it yet. I hope you can try it or share it with a friend. If you do, let me know how it goes!
