I absolutely love grilled food in the summer. Not only does it smell and taste divine but it means that my husband is doing the cooking. Thank you, Grill Master! As much as I love a good burger or BBQ chicken, I need a little variety on the grill. That’s where this blueberry mango salsa came in handy for us last week.
I’ve expressed my love for the HyVee grocery store before, and this salsa recipe is just further proof of its amazingness. This recipe came in a HyVee magazine from 2014 (yes, I’ve kept them all) on grilling and suggests serving this salsa over grilled pork chops. So last week when I was feeling uninspired while meal planning this little combo sounded oh so delicious and summery fresh. We made this salsa with grilled pork chops but it would be equally tasty in a chicken and lettuce wrap for lunch or eaten with plain ol’ tortilla chips.
Here’s the recipe as I made it:
2 cups fresh blueberries
2 fresh chopped mangos
1 chopped cucumber
1/4 cup chopped sweet onion
Cilantro to taste
2 fresh squeezed limes
Red pepper to taste
Salt to taste
- Place blueberries in a bowl and mash 1/3 of them with a fork. Stir in mango, cucumber, onion, cilantro, lime juice, red pepper and salt.
